摘要
综述了产脂肪酶微生物的筛选方法、常见产脂肪酶微生物及其在食品中的应用。并对其在乳制品中的应用进行展望,以期为开发具有稳定品质的传统乳制品提供新思路。
The screening methods,common lipase-producing microbial and their applications in food were summanized.The application in dairy products was prospected in order to new ideas for development of traditional dairy products with stable quality.
