摘要
脂肪酶(EC3.1.1.3)是一类可以水解长链甘油三酯的水解酶。脂肪酶在动物、植物和微生物中广泛存在,而微生物中脂肪酶的种类多,作用温度范围较广且底物特异性高,可用于生产高纯度的酶制剂。目前,微生物脂肪酶作为一种重要的工业酶,在传统工业和新型的产业中都有广泛的应用,一直是行业中的研究热点。对微生物脂肪酶的种类、结构、催化机理、固定化和在食品工业中的应用进行了概述,并对其未来的发展进行了展望。
Lipases(EC3.1.1.3)are a class of hydrolytic enzymes which can catalyze the hydrolysis of long-chain triglycerides.Lipases are widely found in animals,plants and microorganisms,but more species,wider range of temperature and higher substrate specificity are found by microbial lipases,which can be used in the production of enzyme preparation of high purity.At present,microbial lipases as a kind of important industrial enzymes,are widely applied in traditional industries and new industries,and has been the research hotspot.An overview was conducted from aspects of source,structure,catalytic mechanism,immobilization of microbial lipases and its application in the food industry,and the future development was prospected.
