摘要
梨渣主要包括梨皮、梨瓤、梨核及果柄等,是梨在深加工过程中主要的副产物。随着梨加工业不断发展,梨渣的产量越来越多,梨渣中含有大量的膳食纤维,合理充分梨渣膳食纤维不仅减少资源浪费,且对生态环境污染也大大降低。本文通过对梨渣膳食纤维生理功能、提取工艺进行分析总结,对目前梨渣膳食纤维在食品中的应用研究进行概述,为梨渣膳食纤维的应用研究和产品开发提供依据。
Pear residue mainly includes pear peel,pear pulp,pear core and stalk,etc.It is the main by-product of pear deep processing.With the continuous development of pear processing industry,the yield of pear residue is increasing.Pear residue contains a large amount of dietary fiber.Reasonable and adequate dietary fiber of pear residue not only reduces the waste of resources,but also greatly reduces the pollution of ecological environment.Through summarizing the physiological function and extraction technology of pear residue dietary fiber,the application research of pear residue dietary fiber in food was summarized,which could serve as a reference for the application research and product development of pear residue dietary fiber.
