摘要
黑果腺肋花楸作为一种外来引进树种,果实富含糖类、蛋白质、脂肪、维生素、矿物质等营养成分,花青素等多酚类化合物、苹果酸等有机酸类功效成分,果实、果叶等部位在抗氧化、调节免疫力水平、抗疲劳、调节血糖和血脂水平等方面具有一定的功效,目前已被加工成饮料、果酱、酵素、米酒等产品。从黑果腺肋花楸的活性成分、功能作用、产品开发现状、研究展望四个方面,对其进行了综述,旨在为新型食品、保健食品、特医食品及药品的研究、开发提供一定的理论基础及依据。
As a kind of exotic introduced tree species, the fruit of Aronia melanocarpa is rich in carbohydrates, protein, fat, vitamins, minerals and other nutrients, anthocyanins and other polyphenolic compounds, malic acid and other organic acid functional ingredients, fruit, leaves and other parts have certain effects in anti-oxidation, regulation of immunity, anti-fatigue, blood sugar regulation and blood lipid levels, etc. Aronia melanocarpa has been processed into beverages, jams, enzymes, rice wine and other products. This paper reviews the active ingredients, functional functions, product development status and research prospects of Aronia melanocarpa, in order to provide a certain theoretical basis and basis for the research and development of new foods, health foods, special medical foods and medicines.
