摘要
为提高"双丰"山葡萄的附加值,以"双丰"山葡萄皮为原料,在单因素试验基础上,通过正交试验优化超声辅助提取山葡萄皮花色苷工艺,并采用高效液相色谱-质谱联用技术对"双丰"山葡萄皮花色苷组分进行鉴定。结果表明,"双丰"山葡萄皮花色苷最佳提取工艺参数组合为:超声功率300 W、超声时间30 min、提取温度60℃、料液比1︰40(g/mL),在此条件下花色苷得率为0.71±0.03 mg/g;"双丰"山葡萄皮中主要包含飞燕草-3-葡萄糖苷、矢车菊-3-葡萄糖苷和芍药素-3,5-二己糖苷3种花色苷组分。试验结果为进一步开发利用"双丰"山葡萄花色苷提供重要物质基础。
The extraction process of anthocyanins from Vitis amurensis Rupr skins of"Shuangfeng"was optimized by orthogonal test based on single factor experiment to improve its added value.The anthocyanins components of"Shuangfeng"grape skins were identified by high performance liquid chromatography-mass spectrometry(HPLC-MS).The results showed that the optimum extracting parameters to achieve the highest anthocyanins yield of 0.71±0.03 mg/g from Vitis amurensis Rupr skins of"Shuangfeng"were obtained under an ultrasonic power of 300 W,ultrasonic time of 30 min,extraction temperature of 60℃,and solid-to-liquid ratio of 1︰40(g/mL).The skins of"Shuangfeng"grape mainly contain three anthocyanins components in terms of delphinium-3-glucoside,cyanidin-3-glucoside and peonidin-3,5-dihexoside.The important material basis for further development and utilization of anthocyanins from"Shuangfeng"Vitis amurensis Rupr was provided.
