摘要
贝类不仅味道鲜美,富含营养,具有良好的食用价值,同时还具有良好的药用价值。研究结果显示牡蛎中含有大量蛋白质、糖原、维生素、氨基酸及生物活性肽、二十碳五烯酸、牛磺酸以及微量元素等,具有增强免疫、抗肿瘤、降血压、抗氧化等诸多功能。对近年来牡蛎蛋白及肽的研究进展进行了综述,以期为牡蛎的功能性开发利用提供参考。
Shellfish is not only delicious,rich in nutrition,but also has good edible value and good medicinal value.As one of the four major shellfish cultured in China,oysters contain a large amount of protein,glycogen,vitamins,amino acid bioactive peptides,EPA,taurine and trace elements.It has many functions,such as enhancing immunity,anti-tumor,lowering blood pressure,and anti-oxidation.This article reviewed the research progress of oyster proteins and its peptides in recent years in order to provide a reference for the functional development of oysters.
