摘要
针对花椒醇提物是否具有抗氧化性以及花椒醇提物的应用问题,该研究通过实验的方式对花椒醇提物进行了提取,对花椒醇提物的抗氧化性进行了深入研究,最后,测定了花椒沉积物是否可以应用于食品保鲜领域,为拓宽花椒醇提物的附加价值奠定了基础。研究表明:花椒醇提物具有一定的抗氧化能力,不同浓度花椒醇提物的抗氧化能力不同,60%浓度的花椒醇提物抗氧化作用最强;花椒醇提物会产生抗氧化作用的主要原因在于花椒醇提物中含有大量的黄酮和多酚,黄酮和多酚都属于活性物质,另一方面,不同浓度的花椒醇提物抑制细菌的能力也各不相同,主要原因是花椒醇提物中某些活性成分较为复杂,这些活性成分的抑菌机理各有差异。花椒醇提物在食品保鲜领域具有很高的应用价值。
Aiming at the problem of anti-oxidation and the application of pepper pepper alcohol extract,this study extracted the pepper alcohol extract experimentally and conducted in-depth research on the antioxidant properties of pepper alcohol extract.Finally,it was determined whether the peppercorn deposits can be used in the field of food preservation,laying a foundation for broadening the added value of peppercorn alcohol extracts.Studies have shown that the extracts of Zanthoxylum has certain antioxidant capacity,and the antioxidants of different concentrations of Zanthoxylum extract are different.The 60%concentration of Zanthoxylum extract has the strongest antioxidant effect.The ability of the extract to inhibit bacteria is also different.In general,the alcohol extract of Zanthoxylum can have strong application value in the field of food preservation.
