摘要
北方浓香型白酒厂,由于地理环境的因素,昼夜温差大,气候干燥,蒸发量大,加上土质的原因,窖泥更容易退化和板结,因此,窖泥的维护、保养环节就成了生产优质浓香白酒的重中之重。护窖液,就是专门针对北方浓香酒厂窖泥退化而制作的生物活性培养发酵液,是为了增加窖泥中的功能菌数量和生物活性、补充窖泥中微生物生长所缺乏的营养物质和水分,而有针对性的配制和培养的生物营养液,也叫功能菌发酵液。
In distilleries in Northern China,due to wide diurnal temperature variation,dry climate,high evaporation and unique soil property,pit mud tends to degrade and harden more easily,and the maintenance of pit mud has become the key point in the production of high quality Nongxiang Baijiu.Therefore,a kind of pit-protection liquid was developed to increase the quantity and biological activity of the functional bacteria in the pit mud,and to supplement nutrients and water for the growth of microorganisms in the pit mud.
