摘要
西番莲营养丰富,除蛋白质、矿质元素等常规营养外,还富含多酚、芳香类物质、类胡萝卜素等生物活性成分,具有抗焦虑、抗炎症、抗氧化等药用价值。对西番莲果汁及其副产物的营养及功能性成分进行综述,以期为西番莲及其副产品的开发利用提供参考。
Passiflora coerulea is not only rich in the conventional nutrition of protein and mineral elements but also bioactive components of polyphenols,aromatic substances,and carotenoids with the antianxiety,anti-inflammatory and antioxidant medicinal value.The nutrition and functional components of P.coerulea fruit juice and its by-products are summarized to provide a reference for exploitation and utilization of P.coerulea and its by-products.
