摘要
[目的]建立一种快速、有效、准确的方法测定面包、糕点及肉制品中脱氢乙酸含量。[方法]在试样中加入固定体积的提取溶液,除脂、酸化后用乙酸乙酯萃取并用气相色谱氢火焰离子化检测器(FID)检测。[结果]标准曲线浓度在2~200μg/mL线性关系良好(R^2=0.99985),方法检出限为0.0009 g/kg,并且在低(50μg)、中(500μg)、高(1000μg)不同加标量下回收率均在90%~100%,相对标准偏差(RSD)为1.49%~2.84%。[结论]该方法测定不同基质中脱氢乙酸的结果稳定可靠,可适用于批量检测。
[Objective]The research aimed to establish a rapid,effective and accurate method for the determination of dehydroacetic acid in bread,pastry and meat products.[Method]Fixed volume extract solution was added to the sample.After lipid removal and acidification,the sample was extracted with ethyl acetate and detected by gas chromatography with flame ionization detector(FID).[Result]The standard curve concentration had a good linear relationship in the range of 2-200μg/mL(R^2=0.99985).The detection limit of the method was 0.0009 g/kg.The recovery rates were 90%-100%at low(50μg),medium(500μg)and high(1000μg)scales,and the relative standard deviation(RSD)was 1.49%-2.84%.[Conclusion]The results of determination of dehydroacetic acid in different substrates by this method are stable and reliable,and can be applied to batch detection.
