摘要
叙述了云腿加工和贮藏过程中的主要虫害及其防治方法。试验表明,火腿加工前期(腌制、晾晒阶段),主要受绿蝇、丽蝇和麻蝇等危害;火腿加工后期(发酵、贮藏阶段),主要受酪蝇、火腿皮蠹危害。先进的加工方法和卫生条件对虫害防治起重要作用。
In this paper,the method of controlling main ham pest was studied in Yunnan ham processing and storaging.The main pest are fly in ham curing and drying stage.The pest in ham ferment and storage stage are mainly ham moth and Tyrophagus putrescentiae.Good process-ing method and good condition are important for controlling ham pest.
