摘要
研究了苹果汁超滤澄清中操作压力、加工温度、加工时间对渗透流速和有效功率的影响。采用数学模型对超滤参数进行了优化。计算和试验结果表明,超滤膜的最佳工作参数为:压力0.404MPa,温度48℃。通过试验还考察了超滤对提高苹果汁品质的效果:超滤不仅能去除引起果汁沉淀的物质,而且能保留原有的营养成分,还提高了果汁的稳定性。
The effect of operation pressure,temperature and processing time on the flux and effective power consumption in the ultrafiltration (UF) clarification of apple juice is stud- ied.The UF operation parameter is optimized by a mathematic model.Calculations and ex- periments show that the best operation parameters are operation pressure 0.404 MPa and temperature 48℃.Also,the result of raising quality of apple juice by UF is investigated. Results of research indicate that the UF can remove materials which cause browning,haze and sediment,as well as retain the original nutriments and raise stability of apple juice.
