摘要
醋是一种具有悠久历史的调味料,醋在传统的中医中早就有入药的记载,随着研究的深入,醋在保健品中也得到验证和使用。玉和醋是南方特色米醋,不仅是中华老字号品牌,而且是湖南省非物质文化遗产。该文对玉和醋发展历史、现有工艺状况、存在的问题进行了阐述,也从原料、工艺优化、品质控制、功能性挖掘方面为这一品牌做了进一步分析和展望。
Vinegar is one of the seasonings with a long history, which has been used as medicine in traditional Chinese medicine. With the deepening of research, vinegar has also been verified and used in health care products. Yuhe vinegar is a kind of rice vinegar with characteristics of south China. It's not only a China time-honored Brand, but also an intangible cultural heritage in Hunan. The history, current process status and existing problems of Yuhe vinegar were expounded, and the brand was further analyzed and forecasted from the aspects of raw materials, process optimization, quality control and function exploration.
