摘要
由于昆虫类群大、繁殖速率高、生长发育快、蛋白质含量高、氨基酸类别丰富、食物利用率高,被认为是最具开发潜力的动物蛋白源。阐述了昆虫蛋白的组成特点、昆虫蛋白的营养保健价值、昆虫蛋白制备方法和昆虫蛋白食品的开发利用现状。
The insect is considered as the most potential animal protein source because of its the large population,high reproductive rate,fast growth and development,high protein content,abundant amino acids and high food utilization rate. They were described from the composition and characteristics of insect protein,the nutritional and health value of insect protein,the preparation methods of insect protein and the current situation of development and utilization of insect protein food in this paper.
