摘要
以粉末状活性炭为脱色剂,对鲢鱼蛋白水解液在不同条件下(活性炭用量、pH、温度和时间)进行脱色比较。结果表明,1.5%的活性炭用量,pH=4.0,时间为2h,温度为25℃时,鲢鱼蛋白水解液脱色效果明显,氨基酸损失率仅为3.9%。
Silver carp is rich in amino acids and essential trace elements.With the active carbon powder as a decolorizer,the fish protein hydrolysate is decolored in different conditions (the used quality of active carbon,pH,temperature and time ).Throug h comparison,the results indicate that when the used quality of carbraffin is1.5%,pH=4.0,temperature is25℃,time is2h,the decolored fish protein hydrolysate is clear and the loss of amino acid is only3.9%.
