摘要
电阻抗法是新发展起来的应用于食品细菌检验的一项电化学技术。目前电阻抗法已普遍用于检测食品中细菌总数、大肠菌群、沙门氏菌。与平板计数法相比电阻抗法的最大优点在于快速、灵敏、简便 ,对大多数培养基 ,当细菌浓度达到 1 0 6~ 1 0 7个 /mL时即可出现可检测的阻抗变化。检测所需的时间 ,根据样品中细菌浓度不同而异 。
Electric resistance method is a newly developing galvano-chemical method used in determination of food bacteria.At present,the resistance method is commonly applied in determining the sum total of bacteria,coliform and salmonella.Compared to flat-count method,the most remarkable advantage of the resistance method is that it is rapid,sensitive and simple.For most culture mediums,when the bacteria concentration comes up to 10 6~10 7/mL,the dectectable resistance variation appears.The detecting time needing can vary according to the deferent bacteria concentrations.It generally takes several hours to ten odd hours to get the detecting result of the sum total of bacteria.
