摘要
标准为保障餐饮食品安全提供了全新的方式。通过对餐饮食品生产原料标准、设备用具标准、餐饮企业标准化管理以及菜点标准的分析,提出各类标准都相应地对餐饮食品制作存在的危害做出了规范性要求,在此基础上制定完善的餐饮食品安全标准文件,加上餐饮企业建立有完整标准体系,并实施了标准化管理,将促进餐饮食品管理质量的提升。
Standardization provides a new way to ensure the safety of catering. Through the analysis of the raw material standards, equipment and appliances standards, standardized management of catering enterprises and the dish order standards of one of the catering foods, it is pointed out that all kinds of standards correspondingly make standardized requirements for the hazards existing in the catering food production, on the basis of which a perfect catering food is formulated. Safety standard documents, together with the establishment of a complete standard system and the implementation of standardized management in catering enterprises, will promote the promotion of food management.
