摘要
以平菇为试材,采用LED白光照射处理平菇,研究其对平菇采后贮藏品质的影响。结果表明:LED白光处理可有效抑制平菇感官品质下降、褪黑、褐变,延缓失重率和丙二醛(MDA)含量的升高,抑制总酚含量的降解,抑制多酚氧化酶(PPO)活性的升高和过氧化氢酶(CAT)活性的降低,减轻酶促褐变和过量过氧化氢(H_(2)O_(2))损伤。因此,LED白光照射有效维持平菇较好的品质,其光照强度为22μmol·m^(-2)·s^(-1)。
Pleurotus ostreatus was taken as test material,the effect of white LED irradiation on postharvest storage quality of Pleurotus ostreatus was investigated.The results showed that white LED irradiation effectively inhibited the decrease of sensory quality,loss color,browning of Pleurotus ostreatus.The increase of weight loss and malondialdehyde(MDA)content were delayed,the degradation of total phenolics was suppressed.The activity of polyphenol oxidase(PPO)was inhibited which relaxed the enzymatic browning.The decline of catalase(CAT)activity was also suppressed,which relaxed the damage by excessive H_(2)O_(2).The white LED irradiation effectively maintained the storage quality of Pleurotus ostreatus,and the light intensity was 22μmol·m^(-2)·s^(-1).
