摘要
食品工程原理是食品科学与工程专业的综合性、实践性相对较强的专业基础课程之一。基于OBE教育理念,探讨针对该课程不同加工单元操作的教学方法、实验教学内容及考核评价等内容,将OBE教育理念应用到食品工程原理课程教学中,可以有效地调动学生的积极参与性,以成果为导向,初步实现该课程的教学练一体化,取得较好的成效。
Food engineering principles is a comprehensive and practical curriculum in food science and Engineering. This paper mainly discussed the teaching methods, experimental teaching and examination evaluation system of the processing unit in this course based on OBE educational ideas. The results showed that the application of OBE educational idea in the teaching experiment could e? ectively promote the student’s enthusiasm. Following the results of output-oriented, this teaching method preliminary achieved the integration of teaching, learning and practicing and a good e? ect is achieved.
