大槽车体积为2 m^3,小槽车体积为1 m^3,经实验研究和生产实践表明,发酵结束时,小槽车中乙酸乙酯含量约为大槽车的1.5倍,乙乳比为最佳,约2.0,甲醇、正丙醇、异丁醇、异戊醇、杂醇油含量与大槽车持平,通过将整体为2 m^3的大槽车改造成两个体积均为1 m^3的小槽车,可以提高清香型小曲原酒主体香乙酸乙酯含量,使原酒香味更协调,提高原酒品质。
The volume of the large fermentation tanker was 2 m3 and the volume of the small fermentation tanker was 1 m3. Experi- mental study and production practice demonstrated that, at the end of the fermentation, ethyl acetate content in the small fermentation tanker was about 1.5 times of that in the large fermentation tanker, and the ratio of ethyl acetate to ethyl lactate was about 2.0. The content of methanol, n-propyl alcohol, isobutyl alcohol, isoamyl alcohol and fusel oil in the small tanker was almost the same as that in the large tanker. Accordingly, reconstructing the 2 m3 large tanker into two 1 m3 small tankers could increase ethyl acetate content in Xiaoqu base liquor and improve the quality of Xiaoqu base liquor.
