塑料薄膜厚度对木龙观红萝卜保鲜效果的影响 被引量:4

摘要 【目的】研究不同厚度塑料薄膜大帐对木龙观红萝卜的保鲜效果,为木龙观红萝卜的贮藏保鲜提供参考。【方法】分别用0.05,0.10,0.15mm厚的塑料薄膜搭建大帐,在0°C条件下对木龙观红萝卜进行自发气调(modified atmosphere,MA)贮藏,以未进行塑料薄膜大帐贮藏的红萝卜为对照,测定贮藏时间(0~60d)3组大帐内的O2和CO2体积分数以及不同处理红萝卜的失重率,糠心指数,呼吸强度,可溶性糖、胡萝卜素、Vc、游离氨基酸和可溶性蛋白含量及POD、CAT活性的变化,分析3种不同厚度塑料薄膜大帐对木龙观红萝卜的保鲜效果。【结果】随着贮藏时间的延长,不同厚度塑料薄膜大帐内O2体积分数总体呈下降趋势,CO2体积分数呈上升趋势。与对照相比,采用不同厚度塑料薄膜大帐在0°C条件下贮藏60d,能有效地降低木龙观红萝卜在贮藏期间的呼吸强度、失重率和糠心指数,有利于维持红萝卜的可溶性糖、胡萝卜素、Vc、游离氨基酸和可溶性蛋白的含量,延缓POD、CAT活性的下降。【结论】不同厚度塑料薄膜大帐贮藏后有效地抑制了木龙观红萝卜在贮藏期间的衰老进程,有利于保持其品质,对木龙观红萝卜均有较好的保鲜效果,其中0.1mm厚的塑料薄膜大帐对木龙观红萝卜保鲜效果最佳。 【Objective】This study investigated the effects of thickness of plastic film tents on preservation of Mulongguan carrots.【Method】Mulongguan carrots were stored in plastic film tent with different thicknesses(0.05 mm,0.10 mm,0.15mm)at 0°C.Storage without tent was used as CK.The preservative effects were analyzed by measuring and comparing the volume fractions of O2 and CO2in the tents as well as weight loss,hollowness index,respiration intensity,soluble sugar,ascorbic acid,carotene,free amino acid,soluble protein,and CAT and POD activities at storage time of 0-60 d.【Result】The volume fraction of O2 decreased and that of CO2 increased with the increase of storage time.Compared with control,storage in plastic film tents decreased respiration rate of carrots,hollowness index and weight loss,maintained the contents of soluble sugar,ascorbic acid,carotene,free amino acid and soluble protein,and delayed the decrease of CAT and POD activities.【Conclusion】Storage in plastic film tents effectively maintained the quality and delayed senescence of Mulongguan carrots.The best preservative effects of Mulongguan carrots was obtained by 0.1mm plastic film tent.
