Determination of Formaldehyde Content in Common Fresh Foods and Analysis in Jinlin City

摘要 测定生鲜食品中甲醛的含量,为人们在日常生活选择生鲜食品提供依据。采用乙酰丙酮分光光度法测定生鲜类食品中甲醛,在单因素试验的基础上通过正交试验筛选出测定的最佳条件。标定甲醛浓度为3.086 mg/m L,正交试验筛选出了乙酰丙酮分光光度法测甲醛的最佳条件:水浴温度为60℃、乙酰丙酮体积为5.0 m L、水浴时间为12 min。常见的生鲜食品样品中甲醛含量均在0.132~6.561 mg/kg内。依据2016版《中国居民膳食指南》提出生鲜食品的食用量,得出我国居民在生鲜食品方面日平均甲醛摄入总量为1.102~1.873 mg/kg。 It is to determine the content of formaldehyde in fresh foods and analysis sold in the market and to provide a basis for selection fresh foods in the daily life. Formaldehyde in flesh foods was determined by acetyl acetone spectrophotometer. Orthogonal test was used to select the optimum condition for the determination on the basis of single factor experiments. Formaldehyde in food was determined by acetyl acetone spectrophotometer. Calibration of formaldehyde concentration was 3.086 mg/mL. The best conditions for measuring formaldehyde Acetyl acetone Spectrophotometer Method by Orthogonal experiment are as follows: water bath temperature 60 ℃, acetyl acetone volume 5 mL, bath time 12 min. The formaldehyde content in common flesh foods samples is 0.132-6.561 mg/kg. According to the 2016 "Edition of the Dietary Guidelines for Chinese Residents" proposed the edible amount of flesh food, it is concluded that the average daily intake of formaldehyde of Chinese residents is 1.102-1.873 mg/kg in flesh food.
