摘要 食用菌多糖是从其真菌子实体、菌丝体、发酵液中分离出的一类可以控制细胞分离分化、调节细胞生长和衰老的活性多糖,是由醛基和酮基通过糖苷键链接起来的天然生物活性的高分子聚合物。食用菌多糖作为一类重要的生物活性物质,在医药领域,食品工业等有着广泛的应用价值。当前,我国食用菌多糖提取方法工艺主要采用传统的单级间歇式罐式工艺,装备过程落后,生产效率偏低、耗能大、操作复杂、产品质量均一性差、价格高昂等弊端。本文主要介绍了食用菌的成分,生理活性特点、食用菌多糖的提取工艺方法比较、食用菌多糖水解液的定性研究和定量分析、食用菌多糖的应用价值及食用菌多糖的开发利用及前景展望。 Edible fungus polysaccharide is isolated from the fungal fruit bodies, mycelia and fermentation broth can control cell separation and differentiation, regulation of cell growth and senescence of the activity of polysaccharide , and it is composed of aldehyde and ketone groups through glycosidic bond linking the natural biological activity of the polymer, edible fungus polysaccharide as a kind of important biological active substance, in the field of medicine, food industry etc has a wide range of applications. At present, the extraction technology of edible fungus polysaccharide in our country mainly adopts the traditional single stage batch type technology. The current equipment process is not only backward and the production efficiency is low, but also the energy consumption is big and the operation is complex, and the product quality uniformity is poor or the price is high, and so on. This paper mainly introduces the composition of edible fungus, physiological activity characteristics, edible fungi polysaccharide extraction process, edible fungus polysaccharide solution of qualitative research and quantitative analysis of the liquid,edible fungus polysaccharide application value and edible fungi polysaocharide utilization and Prospect.
