The Research Advance and Application of β-Glucan from Yeast

摘要 β-葡聚糖是酵母细胞中存在的一种活性物质。酵母β-葡聚糖是由β-1,3键相连的D-葡萄糖组成的线性骨架及通过β-1,6键相连的分支结构构成。酵母β-葡聚糖有着对人体非常有益的生理功能,例如能提高免疫能力、显著地降血糖、降血脂等作用,在食品、医药、化妆品和水产养殖等行业中有巨大的商业价值。综述了酵母β-葡聚糖的结构与性质、β-葡聚糖的提取和检测方法、β-葡聚糖的生物活性及其应用,并展望了酵母β-葡聚糖的应用前景。 β-glucan was a kind of active substances that exist in the yeast cells. Yeast β-glucan was composed of D-glucose by β-1, 3 key connected consisting of a linear skeleton and connected with the β-1, 6 key branch. Yeast fl-glucan was extremely beneficial physiological functions to human body, for example, it could significantly fall hematic tat. fall blood sugar and improve immune ability and so on, it had huge commercial value in food, medicine, cosmetic, aquaculture and other industries. The structure and properties of β-glucan from yeast, the extraction and determination of β-glucan, β-glucan biological activity and application were reviewed in this paper. Further, the application of β-glucan from yeast was prospected.
