摘要
目的了解吉林地区产常见野菜中粗纤维含量及与普通叶菜类含量的区别,为本地区野菜产品开发与居民食用提供依据.方法根据国家标准对吉林地区山野菜中的粗纤维含量进行测定(酸碱消煮法).采集吉林地区野生野菜7种,人工养殖野菜4种,人工养殖菠菜1种(对照组),进行测定.结果野生野菜组粗纤维含量最低为柳蒿[(2.74±0.47)×10^(-2)g/g],最高为刺五加[(5.01±0.30)×10^(-2)g/g].人工养殖组粗纤维含量最低为人工养殖刺老芽[(1.58±0.23)×10^(-2)g/g],最高为养殖蒲公英[(2.27±0.20)×10^(-2)g/g],人工养殖菠菜[(2.04±0.16)×10^(-2)g/g].结论不同种类野菜其粗纤维含量不同,同一区域的同种类野生野菜粗纤维平均含量明显高于人工养殖野菜;人工养殖野菜粗纤维含量与菠菜粗纤维含量并无明显差异.
Objective To investigate differences in the crude fiber content between the common wild potherbs and ordinary leafy vegetables in Jilin area,to provide a basis for the development and utilization of wild vegetable products in this area. Method According to the national standards determination of crude fibers in plant foods,the content of crude fibers in wild potherbs in Jilin area was determined( Acid-base digestion method). This experiment investigated a total of 12 kinds of vegetables from 9 regions,and 10 samples for each vegetable,with a total of 1080 samples,were studied,including 7 species of wild potherbs,4 kinds of artificial breeding wild vegetables. Results The content of crude fibers in the wild potherb Artemisia selengensis turcz [( 2. 74 ±0. 47) ×10^-2g/g] was lowest and that of Acanthopanax was highest [( 5. 01 ± 0. 30) × 10^-2g/g]. The content of crude fibers in artificial breeding vegetable Aralia elata( Miq.) Seem [( 1. 58 ±0. 23) ×10^-2g/g] was lowest,that of dandelion [( 2. 2 7 ± 0. 20) × 10^-2g/g] was highest,and that of spinach was [( 2. 04 ± 0. 16) × 10^-2g/g].Conclusion The different kinds of wild potherbs are different in the content of crude fibers. In the same area and under the same conditions,the average crude fiber content of wild potherbs should be significantly higher than that of the artificial breeding wild potherbs,and the artificial breeding wild potherbs and spinach are not significantly different in the crude fiber content.
