摘要
村宴是农村酒席,在形式和受众上有别于城市宴会,且受经济水平和思想观念的影响,目前存在工艺技法陈旧、营养概念模糊的问题。以村宴文化、工艺、配餐、安全为切入点,借鉴粤菜的科学理念及技术,对湖北地区的村宴进行改良。结果表明,粤式改良可有效实现湖北村宴菜式现代化和营养均衡化,提升湖北村宴附加值。
Village feast is rural fete banquet, in the form and the audience is different from the city party. Due to the lag of economic and geopolitical influence, there are some problems such as present technique obsolete, lack of nutrition concept and so on. Taking village feast culture, technology, catering and security as the breakthrough point, using the scientific concept and technology of Cantonese cuisine for reference, village feast in the region of Hubei province was improved in this paper. The results showed that the Cantonese improvement can effectively realize the modernization and nutrition equalization of Hubei village feast, and promote its added value.
