摘要
质体是真核植物细胞中功能最强大的细胞器,它在果实的生长发育与品质形成中具有非常重要的作用。概述了桃果实质体的结构、生理、生化和分子生物学方面取得的重要成果,特别是色素与果肉颜色的关系、多酚氧化酶(PPO)含量的变化及其与褐变的关系,冷害、贮藏和各种技术措施对色素含量和PPO含量和活性的影响,并对今后桃果肉质体的研究进行了展望。
Plastids, the most powerful organelles in eukaryotie plant ceils, play an important role in the growth and development of fruit and its quality formation. In this paper, the advances in structure, physiology, bio- chemistry and molecular biology of peach fruit, especially the relations between pigment contents and flesh col- or, the relations between the changes of polyphenol oxidase contents and fruit browning, as well as the effects of chilling , storage and various technical measures on pigment contents and PPO contents and activities in the fruit, were summarized. At last, the researches of peach plastids were prospected in the future.
