摘要
鱼制品是一种常见食物,是以各种鱼类为主要原料,通过多种方式加工而成。鱼腥味是水产品中普遍存在的一种不良风味,有程度大小之分。不良风味的产生原因很多,介绍了目前最常见的10种脱腥方法,以去除或减轻鱼制品强烈的腥味,保持或增强产品品质,得到更易被人们接受的产品,为后续的技术研究提供参考。
Fish products is a common food wich processed by all kinds of ways with variety of fish as the main raw materials. Fishy is a kind of bad taste in the aquatic products and has the different level. The bad flavor appear have a lots of reasons. This paper introduces the most common ten methods to remove or reduce the strong smell of fish products, to maintain or en- hance the product quality', getting more acceptence by people, and also provide reference for technical progress of late.
