摘要
针对食用植物油中重金属的污染及其危害性,利用微波消解技术结合电感耦合等离子体质谱法同时测定食用植物油中8种重金属元素含量。并按照美国环保署推荐的方法,建立了食用植物油重金属污染健康风险评价模型,初步评价了食用植物油中As、Cr(Ⅵ)、Cd、Pb、Cu、Zn、Ni和Mn 8种重金属经口摄入途径所引起的健康风险。结果表明,8种重金属总健康风险约为1.05×10^(-3)a^(-1),其中致癌性污染物健康风险约为1.05×10^(-3)a^(-1),非致癌性污染物健康风险为3.38×10^(-10)a^(-1)。致癌性污染物对人体的健康风险危害性大小顺序为Cr(Ⅵ)>As>Cd,非致癌性污染物对人体健康风险的危害性大小顺序为Ni>Pb>Cu>Zn>Mn。此外,实验结果表明致癌性重金属比非致癌性重金属对人群产生的健康风险更显著,致癌性重金属中Cr(Ⅵ)对健康风险影响最大。
In order to research the contamination degree and hazards of heavy metals,kinds of heavy metals in edible vegetable oils were simultaneously determined byplasma mass spectrometer ( ICP - MS) after microwave digestion. The health riskthe contents of eight inductively coupledassessment model ofheavy metal contamination was established according to the method recommended by United States Envi-ronmental Protection Agency(USEPA). The health risks of oral intake of eight kinds of heavy metals As,Cr(WI) ,Cd,Pb,Cu,Zn, Ni and Mn in edible vegetable oils were preliminarily assessed. The resultsshowed that the total health risk of the eight kinds of heavy metals was 1.05 x10-3 a-1, in which thecarcinogenic risk was 1.05 x 10-3 a-1 and the non -carcinogenic risk was 3.38 x 10-10 a-1. The healthrisks caused by carcinogenic heavy metals in edible vegetable oils decreased as the order: Cr(VI) , As,Cd, and the risks caused by non -carcinogenic heavy metals decreased as the order: Ni, Pb, Cu, Zn,Mn. It indicated that the health risk caused by carcinogenic heavy metals was much higher than thatcaused by non - carcinogenic heavy metals, and Cr(1) showed the highest potential risk.
