摘要
以废蚕茧为原料 ,采用Alcalase酶和Flavourzyme酶双酶水解工艺 ,得到丝素肽的低分子量降解物 ,经过对降解物进行脱色、脱异味处理 ,用超滤膜分离出分子量 10 0 0以内的丝素肽 ,制成含丝素肽 3 %、含糖量 13 %、pH值 4 4的不同水果香型的功能性丝素肽饮料 ,4℃贮藏达 12个月以上无沉淀产生 ,解决了丝素蛋白的酶解率低、生物效价低等问题 ,为蚕茧蛋白食品的开发提供了一条有效途径。
Waste pod was hydrolyzed with Alcalase and Flavourzyme to obtain fibroin peptides of lower molecular weight, which were decolourized, deodoured and then filtered by the UF technology to give peptides of molecular weight less than 10000. Fruit flavoured functional drinks (pH 4.4) containing 3% peptides and 13% sugar were prepared and stored at 4℃ for over 12 months without precipitation. The problems of low enzymolysis efficiency and low bio-value of silk proteins of large molecules were solved and an efficient way was found for the development of products containing fibroin.
