摘要
米糠是稻谷加工的主要副产物,富含膳食纤维等多种生理活性物质,具有较高的开发价值。通过收集、查阅大量参考文献,总结出目前国内外提取米糖中膳食纤维的方法主要有物理法、化学法和酶解法,并综述了米糠膳食纤维提取工艺的研究现状、提取方法及其优缺点,以期为米糠膳食纤维的提取研究提供参考和建议。
Rice bran is the main byproduct of rice processing, it is rich of dietary fiber and other physiological active substances, with the development of high value. The paper summed up the main methods of extracting dietary fiber in rice bran at home and abroad, and summarized the research status of rice bran dietary fiber extraction process,extraction methods and their advantages and disadvantages, so as to provide reference and advicefor the extraction researchof rice bran dietary fiber.
