基于人文地理学视角的中国饮食文化研究综述 被引量:3

A REVIEW OF FOOD CULTURE RESEARCH FROM THE PERSPECTIVE OF HUMAN GEOGRAPHY IN CHINA

摘要 通过相关文献的梳理,回顾中国人文地理学视角下的饮食文化发展,发现研究可分为萌芽阶段(2000年以前)、起步阶段(2000—2009年)和发展阶段(2010年至今)3个阶段;研究个案居多,缺乏理论审视;在研究尺度上,多集中在中观省市层面,宏、微观研究缺乏;在研究内容上,朝向非物质化,但成果较少。国外人文地理学对饮食文化的研究比中国起步早,且在微空间与非物质化研究方面涉及较多;未来中国的相关研究应多借鉴国外优秀成果,结合中国地方特色,加强对饮食与地理理论研究的重视、拓展饮食文化微观空间的研究及饮食社会文化分析的深化,以推动中国饮食文化与国际研究接轨及人文地理学饮食研究的深入发展。 By combing the literature of food culture development in China, the paper from the perspective of hu- man geography found that the development of the academic research can be divided into three stages : the embry- onic stage (before 2000), the initial stage (2000 - 2009) and the evolutive stage (since 2010) . The majori- ty of this research were case studies and lacked theoretical examination. In terms of study scale, mostly article concentrated in the middle provincial leve, lacked of grasping from macro - micro perspective. As for the study main contents, this theme of research were becoming more and more dematerialize, but the results are less. As compared with human geography study in China, foreign research of diet culture started relatively early, micro spaces and dematerialization are involved. The article points out that the relevant research of China in future should draw on achievements of other countries. What's more, combined with local characteristics, the rasearch shouled pay more attention on the fundamental theories of food and geography, broaden research of diet culture micro - space, discusses social -cultural deeply, so as to promote China's relevant research to reach wih the international study and the depth development of food research from the perspective of human geography.
