摘要
选取乳双歧杆菌(Bifidobacterium lactis,Bi-07)为实验菌种,研究了氮气和贮藏温度以及不同种类的益生元对Bi-07蛋白质营养粉稳定性的影响。以益生菌的活菌量为检测指标,通过厌氧操作定期确定活菌数,得到最佳的蛋白质营养粉的贮藏条件,并在该条件下进行低聚半乳糖(FOS),低聚果糖(GOS)以及混合添加对益生菌活性促进效果的研究。结果证明:Bi-07蛋白质营养粉最佳的贮藏条件为22℃,不充入氮气,低聚半乳糖,低聚果糖均能促进益生菌的存活率。
This paper selected the Bifidobacterium lactis(Bi-07)as the target strains and from the storage temperature,nitrogen and different types of prebiotics to study the stability property ofprobiotics added into protein nutrient powder.The optimal storage condition were determined by using amount of living probiotics as examination index and evaluation the accelerated enhancement of Galactoohgosaccharides,Fructo oli- gosaccharide and mixture added into protein nutrient powder to probiotics.The results showed that the best storage condition is 22℃ with- out nitrogen;different types ofprebiotics can promote the survival rate of Bifidobacterium factor.
