摘要
研究了几种常见功能性低聚糖对发酵乳生产适用植物乳杆菌XC-10的影响。结果表明院和相同浓度葡萄糖对照比较,1.2%~1.6%低聚果糖对发酵过程中XC-10的活菌数影响最大,发酵16 h后活菌数达到3.4伊109CFU/g,为对照组的1.9倍;14 d的贮藏期内,低聚糖对XC-10的生长具有保护作用,活菌数比对照组多10%以上;在人工胃液中添加1.2%~1.6%低聚果糖或低聚半乳糖,XC-10生存率是对照组的1.2倍以上,表明低聚糖在极酸摄食环境下对XC-10菌株有显著保护作用。
This paper studied the effects of oligose with Lactobacillus plantarum XC-10 filling for fermented milk production. The results showed that the viable count of XC-10 reached 3.4×10^9 C FU/g, 1.9 times for the same concentration of glucose with 1.2%-1.6% oligosaccharide; Oligose had a protective effect on the growth of XC-10 in 14 d storage period,and the viable count of XC-10 was more than 10% of the control group;Finally,the survival rate in simulated gastric fluid was more than 1.2 times for the control group with 1.2%-1.6% oligose ,which showed that oligose had important protective effect of XC-10 in the polar acid feeding environment.
