The Research Progress of Molecular Biological Technology in Identifying Meat Products

摘要 近年来,国内外曝光了多起肉制品掺假事件,引发了全球消费者对食品安全的极大担忧。随着生物技术和分析仪器的不断发展,以DNA为基础的分子生物学技术应用于肉制品的鉴别已成为了现实。综述几种常见的分子生物学技术在肉制品鉴别的应用及研究进展。 In recent years, many meat adulteration incidents were exposure at home and abroad, which'triggered consumers around the world great worrying about food safety. With the development of biotechnology and analysis instrument, DNA-based molecular biological technology used in identifying meat products has become a reality. This paper reviews the applications and research progress of molecular biological technology commonly used in meat products identification.
