摘要
以新鲜地蚕和胡萝卜为原料,研制地蚕胡萝卜复合果蔬汁饮料,采用单因素实验和正交试验对复合饮料的原料配方和复合稳定剂用量进行优化。实验结果表明,产品最佳原料配方为:地蚕与胡萝卜汁配比为1∶2、混合汁总用量25%、F55果葡糖浆用量5%、柠檬酸用量0.15%;复合稳定剂最优组合为:羧甲基纤维素钠0.05%、海藻酸钠用量0.03%、果胶0.03%、黄原胶0.05%。所得产品具有地蚕和胡萝卜所特有的香气,组织状态良好,口感细腻,酸甜爽口。
Stachys geobombycis and carrot are used as raw materials to develop a complex juice beverage. Formula and compound stabilizer ratio of the complex juice drink was optimized by the single factor and orthogonal tests. The results indicated that the optimal formula was as follows： stachys geobombycis juice ： carrot juice 1 ∶2,juice mixture 25%,F55 high fructose syrup 5%,and citric acid 0.15%. The optimum compound stabilizer formula included 0.05%CMC-Na, 0.03% sodium alga acid, 0.03% pectin and 0.05% xanthan gum. The product had a unique stachys geobombycis and carrot aroma,taste,organization in good condition.
