摘要
以鲟鱼(Acipenser sinensis)硫酸软骨素为原料,分别采用盐酸酸解法、过氧化氢氧化法、草酸降解法和辐照降解法对其进行处理,使得鲟鱼硫酸软骨素的相对分子质量从35 193分别降至1 841、1 155、2 089和3 049,相对分子质量明显减小,且对DPPH·和·OH的清除能力及Fe3+还原能力明显提高。结果显示,过氧化氢降解所得硫酸软骨素寡糖抗氧化性能很好,当浓度为500μg/m L时,对DPPH·和·OH的清除率可达85%和70%。
Taking sturgeon chondroitin sulfate as raw materials and adopting HC1 acid solution, hydrogen peroxide, oxalic acid and radiation to degrade it. The results showed that the relative molecular weight of chondroitin sulfate had respectively dropped from 35 193 to 1 841, 1 155, 2 089 and 3 049. Molecular weight was greatly reduced compared with that of the raw material. In addition, the scavenging activity on DPPH o and OH o and the reducing activity on Fe3+ has been greatly increased. The results showed that chondroitin sulfate with hydrogen peroxide degradation had good oxidation resistance, when the concentration of oligosaccharide is 0.5 mg/mL, the inhibition rate on DPPH. and OH could reach 85% and 70%.
