摘要
豆丝是武汉及周边地区的特色小吃,是用大米和豆类制作而成类似宽面条形态的主食。本文简单介绍了豆丝的生产工艺,指出豆丝生产中存在的问题,并对豆丝产品质量提出了改进方向,以改善易断易碎的性状、提高复水性、延长货架期,最终实现工业化生产。
Dousi is a layer of soft skin made of beans and rice milk,which is the most famous snacks in Wuhan and surrounding areas.The production technology of Dousi was introduced briefly in this article.What is more,the common problems in Dousi production were pointed out.Dousi needs to improve its friable texture,increase water reabsorbing capacity and prolong shelf life,leading to industrial mass production in the end.
