摘要
以红方豆腐乳为菌源材料,经含有乙醇和链霉素的麦芽汁培养基富集和平板分离,得到一株降胆固醇的红曲霉(Monascus)菌株X2,对菌株的形态结构特征进行了观察。通过初筛和胆固醇降解试验研究表明,X2菌株具有较强的降胆固醇能力,在32℃摇床发酵6 d,胆固醇降解率可达60.82%。
Using red sufu as microbial source, after malt juice medium (containing alcohol and streptomycin) enrichment and plate isolation, Monascus X2 with cholesterol-reducing function was isolated, and morphological characteristic of the strain was observed. Through primary screening and cholesterol degradation experiment, the result showed that the strain X2 had stronger ability to degrade cholesterol. After fermentation at 32℃ for 6 d, the degradation rate of cholesterol reached 60.82%.
