摘要
研究了香菇浸提液对乳酸菌生长的影响。结果表明 :香菇浸提液对酸奶中的嗜热链球菌和保加利亚乳杆菌均有促进作用。 1%添加量使发酵 7h的酸奶混合菌比生长速率提高了 3 3% ,球菌提高了 5 5 % ,杆菌提高了3 2 %。
Effects of \% Lentinula\% extract on the growth of lactic acid bacteria were studied. The results showed that \%Lentinula\% extract could promote the growth of lactic acid bacteria .Addition of 1% \%Lentinula\% extract could increase the maximum specific growth rates of yogurt lactic acid bacteria by 3 3%,\%Str.thermophilus\% by 5 5%, and\% Lac.bulgaricus \%by 3 2%.
