摘要
目的:建立1种南方山葡萄酒产品的质量评价和真伪鉴别方法。方法:利用高效液相色谱分析南方山葡萄酒的单体酚类物质,建立单体酚类物质指纹图谱。采用夹角余弦法计算相关系数,对指纹图谱进行系统聚类分析。结果:"刺葡萄酒"和"桂葡1号葡萄酒"单体酚的HPLC指纹图谱相似性较差,同一品种不同年份的葡萄酒单体酚的HPLC指纹图谱具有一定的相似性。葡萄酒单体酚指纹图谱可用于区分不同品种、年份的南方山葡萄酒,是南方山葡萄酒鉴别的1种可行方法。
Objective： To eastablish a way of quality evaluation and identification for southern wild grape wines. Methods： The mono-phenoles were detected by high-performance liquid ehromatography（HPLC） to establish fingerprints of southern wild grape wines, correlative coefficient was computed using cosine method, and fingerprints were analyzed by cluster analysis. Results： It was similary for mono-phenoles fingerprints in the same varity grape wine vintaged in differ- ent years for ＇brier grape wine＇ and ＇Gui-pu No1 wine＇, but it was not similary in different varity grape wines. It could identify wines of different varity or vintaged in different years with the mono-phenole fingerprints, it also was an effective method to identify southern grape wines.
