摘要
分析了5种未成熟油茶籽的基本组成及其茶籽油的理化特性、脂肪酸组成和生育酚含量.未成熟油茶籽仁含油21.3%~48.4%,蛋白质7.1%~8.7%,灰分2%~3%.未成熟茶籽油的酸值为1.06~21.27 mg/g、皂化值为172.4~192.3 mg/g、过氧化值为0.31~0.58 mmol/kg、不皂化物含量为0.45%~0.81%、折光指数(n20)为1.469 6~1.470 1.未成熟茶籽油的主要脂肪酸组成为油酸75.26%~79.39%、棕榈酸9.10%~10.50%、亚油酸8.47%~11.23%;sn-2位主要脂肪酸组成为油酸82.52%~85.24%、亚油酸12.63%~15.41%;生育酚的含量为31.08~37.78 mg/100 g,主要是α-生育酚.
The basic composition of five unripe Camellia oleifera seeds and the physicochemical properties, fatty acid composition and tocopherol content of the oils from these camellia seeds were analyzed in this paper. The kernels of these seeds consisted of 21.3% to 48.4% oil,7.1% to 8.7% protein, and 2% to 3% ash. The acid value, saponification value, peroxide value, unsaponifiable matter content and refractive index (n20) of the unripe Camellia oleifera seed oils were 1.06 to 21.27 mg/g, 172.4 to 192.3 mg/g, 0.31 to 0.58 mmol/kg,0.45% to 0.81% and 1.4696 to 1.4701, respectively. The major fatty acids of the oils from these unripe CameUlia oleifera seeds contained 75.26% to 79.39% oleic acid, 9.10% to 10.50% palmitic acid and 8.47% to 11.23% linoleic acid. The fatty acids on the sn-2 position of these oils contained 82.52% to 85.24% oleic acid, 12.63% to 15.41% linoleic acid. The content of tocopherol, α-tocopherol mainly, in these oils, was 31.08 to 37.78 mg/100 g.
