摘要
研究了河南不同生态区烟叶在烘烤过程中叶绿素的降解及与化学成分的相关性,结果表明,叶绿素在变黄期降解量最大,平均为鲜叶含量的74.75%,且直至干筋期仍能缓慢降解,降解速度最快时期为开烤后24~36h。类胡萝卜素的降解总体上随着烘烤的进行,类胡萝卜素的含量逐渐下降,降解速度仍以变黄期较快。在烘烤过程中,叶绿素和类胡萝卜素的含量变化与水分含量呈极显著正相关,与总糖和还原糖含量呈极显著负相关。
The degradation of pigment contained in tobacco leafs during flue-curing process and the relative analysis with chemical compositions were studied.Leaf sample came from different ecological regions in Henan Province.The results indi cated the maximum chlorophyll degradation appeared in the yellowing stage,which average74.45percent in the fresh leaves.The chlorophyll was slowly degrading until the dry-ing-vein stage.The period of the quickest degrading was24~36h after curing.The content of carotenoid was generally degraded in the flue-curing process.The highest speed of the carotenoid degradation was al-so in yellowing stage.The highly significant positive correlations were observed between chlorophyll and carotenoid with moisture,and the significant negative correlation s with total variation and reducing sugar,re-spectively.
