摘要
黄水是固态白酒发酵的副产品 ,内含丰富的营养物质。利用黄水酯化液 ,提高洋河名酒率 ,不失为降低酿酒生产成本的一条捷径。工艺流程采用混蒸续渣老五甑工艺 ,酯化液倒入底锅串蒸 ,其中头桶大渣 30kg ,二桶大渣 2 5kg ,小渣 10kg。试验结果 ,名酒率提高 8 8个百分点 ,操作确实可行 。
Yellow water is the secondary product in solid liquor fermentation.There are plenty of nutriment in it.Making use of the yellow water esterified liquid to improve the famous liquor rate,which is one of the best way to reduce the production cost.The traditional technology of Yanghe liquor is adapted,the esterified liquid is put into the bottom of the tank to distilate.The first tank is 30 kg,the second tank is 25 kg,and the third tank is 10 kg.And theresult:the rate of famous liquor is improved 8.8 percent.It has been proved taht the way is practicable,and the way has been spreaded and applied into the production.
