摘要
研究了两种佛手瓜(白皮和绿皮)的营养成分,结果表明,佛手瓜中矿质元素的含量丰富,其中以K、Ca、Fe和P等元素的含量较高。组氨酸和VB2、VC的含量也较高,但与其它果蔬相比,VA和β-胡萝卜素的含量相对偏低。
The nutritional components in Sechium edule Swartz(white peel and green peel)was investigated.The results show that it riches in mineral elements content,and K,Ca,Zn,Fe and P are especially high among them.The contents of histidine,VB2 and VC are higher,and VC are higher,and VA,β-carotene are relatively lower,compared with other vegetables.
