摘要
为了研究放养对松辽黑猪生长性能、血清生化指标及肉质营养成分的影响,试验采用单因子随机分组设计,选择体重(99. 0±3. 0) kg去势松辽黑猪公猪30头,随机分为圈养组和放养组,每组5个重复,每个重复3头猪。圈养组在5个6 m2(2 m×3 m)的水泥地面饲养,放养组在5个2 500 m2(50 m×50 m)树林中放养,均饲喂同一种日粮,自由采食,试验期为75 d。结果表明:与圈养组比较,放养组平均日增重显著提高(P<0. 05),料重比极显著降低(P<0. 01),血清中总胆固醇(CHOL)、三酰甘油(TG)含量显著降低(P<0. 05),血糖(GLU)含量极显著降低(P<0. 01);背最长肌中粗脂肪含量显著提高(P<0. 05);非必需氨基酸(NEAA)和风味氨基酸(FAA)含量极显著提高(P<0. 01),必需氨基酸(EAA)和支链氨基酸中的缬氨酸含量呈下降趋势,但差异不显著(P>0. 05),油酸和总脂肪酸含量显著提高(P<0. 05)。说明放养能够改善松辽黑猪生长性能和血清生化指标,促进猪只快速生长并通过提高风味氨基酸和不饱和脂肪酸含量提高猪肉营养成分,改善猪肉风味。
This study was to investigate the effects of captive and stocking on the growth performance,serum biochemical indices and nutritional composition of meat of Songliao Black swine.In this experiment,a single-factor random group design was adopted.There were 30 castrated Songliao Black swine weighing (99.0±3.0)kg,which were randomly divided into two groups,each group had 5 repeat,each repeat had 3 pigs. Pigs of captive group were kept on five 6 m^2 cement floors (2 m×2 m)while pigs of stocking group were ketp in five 2 500 m^2 woods (50 m× 50 m).The pigs of stocking group and captive group were fed freely with the same diet lasted for 75 days.The results showed as follows:compared with the captive group,average daily gain was significantly increased (P<0.05)and the ratio of feed to gain were extremly reduced (P< 0.01 )of the stocking group.The CHOL(P<0.05),TG(P<0.05)and GLU (P<0.01)content of the stocking group were reduced.The content of intramuscular fat of the stocking group was increased significantly(P<0.05).NEAA and FAA of the stocking group were extremly increased (P<0.01).EAA and the Val of BCAA of the stocking group were not significantly reduced (P>0.05).The tatal of fatty acids and oleinic acid of the stocking group were increased significantly(P<0.05).It indicats that the appropriate understory stocking can improve the growth performance by environment,serum biochemical indices and nutrient composition and flavor by increase the content of flavor amino acids and unsaturated fatty acids in meat of Songliao Black pigs to some extent.
