虾头含有丰富的营养物质,且是虾体中香味较突出的部分。本文介绍了由虾头制备提取率高、虾香味浓郁的虾营养基料研究结果。
The cephalothorax of shrimp contains protein and other nutritional ingredients, It is the part of shrimp's body which have relative concentrated shrimp's characteristic flavor. This paper describes the result of preparing a shrimp extract which not only have rich protein content but also have strong characteristic flavor of fresh shrimps from cephalothorax of shrimps for food industry.
