摘要
本文对果胶酶产生菌白孢子突变株AspMW_1等菌株的酶学特性及液体发酵条件进行了研究,此突变株酶作用的最适pH为3.5,最适温度为60℃,在40℃以下热稳定性较好,液体培养基为:麦麸,硫铵,赖氨酸等,并以苹果果胶为诱导物,在起初pH3.5和28℃条件下有利于产酶,并促进产酶期提前。
We have studied the conditions of liquid fermentation on white spore mutant of pactinase-strain in this paper. The medium for liquid fermentation consisted wheat bran 3.2g; Lysine 40mg; ( NH, ) 2>SO4 0.8g; H2O 40ml, The optimum pH and temperature for the enzgme activity production are pH3.5, 601℃. some other properties of the enzyme were discussed in detail.
