摘要
测定鸽肝营养素及有害元素的含量 ,结果表明 :鸽肝中营养素种类比较齐全 ,但与其它常用畜禽类肝脏的营养素含量相比 ,有一定的差别 ;鸽肝中铅、砷、镉、汞等有害元素的含量不高。因此 ,鸽肝安全可食 ,特别适合于老年人等特殊人群营养素的补充 。
The research is about the analysis of nutritional components and poisonous elements of pigeon liver.The result shows pigeon liver contains rich nutrients and less poisonous elements,such as Pb, As, Cd and Hg,compared with livers of other livestocks.Pigeon liver is edible and more suitable for old men and so on for complementary nutrients which are lower in some other foods.So the development of pigeon liver should be paid attention to.
