摘要 对100名学生用5日称重法作膳食调查,对其身高、体重及皮褶厚度进行测量评价,并检查有关营养缺乏病体征。结果显示:(1)其膳食以粮谷类和蔬菜类食品为主,动物性食品偏少,不足整个膳食的10%。(2)男女生蛋白质、硫胺素、核黄素、硒摄入量不足,女生碳水化物、钙、锌及能量摄入量亦不足。(3)豆奥及动物性食品提供的蛋白质占整个膳食蛋白质的30%左右。(4)蛋白质提供的能量偏低,而脂肪的供能比偏高。(5)膳食中70%以上脂肪来源于植物性食品。(6)三餐能量分布不够合理,早餐供能偏低。(7)男生生长发育正常,女生超体重现象较严重。男女生中均未见明显的营养缺乏病体征。 100 senior students were selected for this survey. The investigation was done on a 5-day scheme. Food intake, body weight, height, skin fold were recorded. Signs of nutrition-deficient diseases were also looked for. We found that the diet formation was irrational, intake of animal food was insufficient. Intakes of proteins, thiamin, riboflavin and selenium below normal.In female students, carbohydrates, calcium, zinc and energy supplies/were also insufficient. About 30% of the daily protein-intake came from soybean and animal food.They obtained fats mainly (over 70% ) from vegetable foods. Protein-energy ratio was low, whereas, in contrast, fat-energy ratio was high. Breakfast could not meet the energy requirement. Overweight was common among girl students. However, nutritional deficient diseases were not observed.
